Thin mints are rich and chocolatey with a subtle but super refreshing minty taste. The cookies are wonderfully crisp and you will have a hard time stopping at just one once they are enrobed in dark chocolate.

The coating is a blend of chocolate and oil and peppermint extract. I like to use dark chocolate but you can use semi sweet or milk chocolate if you want it lighter.

You need the oil so the chocolate does not set completely hard and I recommend using peppermint oil if you can find it as some liquid flavorings can cause chocolate to seize.

I highly recommend making a double batch of these babies and freezing half of the dough for later. Just wrap it in a log and slice off cookies when the mood strikes.
